This recipe serves 3 people. Cook the sauce first and add the meatballs part way through based on the steps below.
- 600g chicken mince
- 2 cloves of garlic
- ½ red onion finely chopped
- Chicken salt and garlic and herb salt
- Egg White
Mix all ingredients in a big bowl with your fingers until combined. Spoon them out to the size of meatballs that you like, I make 15 big ones. Make sure they are stuck together semi tightly in a ball. Add to baking tray and bake in the oven on 160 degrees until cooked through. This will roughly be 30-40 mins depending on your oven.
Sauce serves 3 people.
In another baking tray add 3 medium tomatoes, 2 red capsicums, 1 large red onion peeled, 3 cloves of garlic. Add seasoning, I like to use chicken salt, pepper and fresh rosemary. Bake for 60-75 mins depending on your oven. Once cooked place all the ingredients into a food processor or a bowl and blend with a hand blender. I like to add a few drops of sucrose sweetener to taste or 1-2 tsp of stevia.
Make the carbless noodles as stated on the packets. I buy the SLIM PASTA which is normally down the pasta isle at most supermarkets. If you are not too worried about carbs cook normal pasta. Throw the cooked pasta into the pan with chopped onions and mushrooms and cook the veges to your preference. Add the pasta sauce on top to heat through and once it is to your liking add the meat balls on top.
